For most of yesterday, I was in the mood for the grilled chicken that my mom makes. We use it in sandwiches, as a stand alone, in quesadillas, in salads, and I’m sure there’s more. I texted her yesterday to confirm that it really was as easy to make as I thought and she told me that it required 2 ingredients and almost no time. I picked up the necessary items as well as the ingredients to make guacamole and told Shane that all I needed from him was to turn on the grill.
Marinate the chicken in light Italian dressing for as long as you want. Mine ended up being in there for probably 3 or 4 hours so it ended up with a great flavor and was nice and moist.
It turns out that I had lied to Shane and he actually ended up doing all the grilling while I stayed inside and made the guac. I only used 2 of the avocados, 1 tomato, 1/2 of the lemon, and probably between 1/3 and 1/2 of the red onion.
These were some big pieces of chicken so they took a little longer to cook all the way through but my plan was to cut it all up and then use it for lunches and dinners throughout the week. I got Shane this grill for our anniversary last year and it definitely gets more use in the summer months than in the winter.
It seems like avocados are slowly becoming more in season because each batch of guacamole lately seems to be getting better. I prefer mine chunkier as opposed to some of the smooth stuff that you get in a lot of restaurants or pre-made at the grocery store.
Obviously I had to taste test while Shane was outside with the chicken and I was very pleased with how this round turned out!
The chicken was delicious and I ended up making a little chicken quesadilla (not pictured) for myself for dinner. My original plan was to do some sort of Mexican chicken salad or chicken tacos but I was tired extra early last night and after the guac tasting, my appetite was gone. Now we have a huge Ziploc bag of chicken for sandwiches, tacos, and salads for the rest of the week.
This morning I decided to step away from my smoothie addiction and cook up some eggs for breakfast. After reading this article last night, I had eggs on my mind so I made an egg, provolone, and jelly sandwich. Unfortunately raw eggs are a no-no while pregnant so I made sure to cook these all the way through.
Since we have showings today, I am working from the office so I prepped some food to bring with me. I made a salad with lettuce, a little light cheese, and the chicken from last night all in a bag as well as a bag of fruit that I’m planning to add to the vanilla Greek yogurt. It only took me about 5 minutes to put together but it will save me time, money, and unnecessary calories at work.

Love me some guac!! I buy avocados weekly. It’s my favorite veggie. I also always have bananas, apples, carrots, hummus, bread, oats and peanut butter (standard).
I always want to add it to sandwiches but I chicken out, I guess guac is the only way I really like my avocados. I’m totally with you on the bananas, apples and carrots but I also keep almond milk (for smoothies), Greek yogurt and eggs on hand!
