Dinner last night was an old favorite- Tokyo Joe’s. This is an old pic but last night’s bowl was huge. Last time we went there, I only got a tiny bit of broccoli so I decided to work the system and double up this time. That meant that my bowl seemed to almost double in size, gave me leftovers for today, and made me feel like I got more bang for my buck. Since last night’s dinner wasn’t too exciting, I decided to share some pictures from dinner on Monday. We went to McCabe’s which is a restaurant and pub at a big shopping center that is a little farther away than the malls we usually go to. I ordered their Chophouse Style Grilled Sirloin Steak Salad with the dressing on the side. I enjoyed the salad but left the garlic bread in favor of one of my favorite menu items….

A major reason we decided to go to dinner out there was so that we could hit up Bed Bath & Beyond and update our registry. We were very on top of things when we first got engaged and did a prelim registry a long time ago but now that our wedding is only 10 weeks away, we needed to add some more stuff.
One item that I am particularly excited for? A melon slicer!

I’ve been feeling smoothies in a big way lately so I’m pretty sure that my breakfasts this week would have been looking pretty repetitive if I had posted all of them. Today I mixed it up just the tiniest bit by adding Greek yogurt and a sprinkling of coconut on top. Shane was bragging the other day that his oatmeal bar at work had coconut so it’s been on my mind.
Strawberry Coconut Smoothie
- Almond milk
- 1 scoop vanilla Pure Protein powder
- a couple frozen strawberries
- 100 calorie Yoplait Greek yogurt (strawberry)
- frozen peaches and bananas
- unsweetened shredded coconut
The yogurt helped to punch up the strawberry flavor and thickened everything up. I also added the coconut as an afterthought and then just stirred it together in my cup. This cup was actually from Carey’s bachelorette weekend but I recently rediscovered it. Since I leave for England for two weeks on Monday, I dug out our monstrous suitcase and found out that I didn’t finish unpacking from that trip to Austin- whoops!
As excited as I am for it to be Friday (I think the nice weather makes the weekend even more appealing), I have a lot still to do before my flight on Monday. Luckily Shane’s mom has been doing an awesome job helping us get the house ready to go on the market so that is a huge weight off of my shoulders.
The sun is already starting to warm up my office so I’m feeling ready for a lunchtime run, my plan is to do 4-5 miles. I love to workout before going somewhere around sea level because it just feels so much easier! Living in Colorado definitely makes you appreciate your vacation workouts just that much more

Do you ever notice elevation differences when you work out while traveling?








I love that melon slicer! I haven’t really noticed a difference working out while out of town and at different elevations, but the pollution in China made everything hard.
