Last night Shane picked up Chipotle for dinner which we haven’t had in a while. I made sure to load up on the veggies and only get a little of the cheese and sour cream. When I was in high school, I would order a chicken burrito, rice, cheese, sour cream, and lettuce- the end. When I was a vegetarian, I would get the exact same thing minus the chicken, talk about a picky eater.
I’m glad that I now appreciate more foods (even though some people claim I’m still a picky eater). Instead of focusing on rice as the base, now I try to focus on lettuce as the base so that my bowls aren’t totally calorie bombs and packed full of carbs.
I used the Chipotle nutrition calculator and figured out that this bowl came to 425 calories which is much better than the huge counts that I’ve seen on some of the menu items there.
Last night I was at the store picking up a few last minute items for our Thanksgiving potluck at work and I came across this new to me peanut butter. I’ve tried a few of their canned NUTrition options but I had never seen them in the peanut butter form.
This morning I wanted to try it out so I went back to a breakfast that I haven’t had in a couple months- the two ingredient pancake! I kept things simple with just one egg, a medium banana, a dash of cinnamon, and then I topped it with 1 1/2 tbsp of the NUTrition energy mix peanut butter.
I am a big fan of this peanut butter! I loved the different textures and tastes that it added to the pancake. I had left it in my car overnight and it was hard from the cold so I am interested to see how well it spreads (important factor in nut butters!) when it is room temperature, but overall it was a winner.
After my killer legs workout yesterday, I decided to do any easy 4 miles on the treadmill today to stretch everything out which took about 43 minutes. I followed that up with 2 miles of .20 sprinting (at 8.0) and .1 of walking for an extra burn since there will be tons of food at lunch today. I finished the workout with a plank hold where I finally reached the 3 minute mark!! That might be record breaking for a lot of people but it was pretty awesome for me- today is off to a good start!
