Something Old and Something New

Last night Shane picked up Chipotle for dinner which we haven’t had in a while.  I made sure to load up on the veggies and only get a little of the cheese and sour cream.  When I was in high school, I would order a chicken burrito, rice, cheese, sour cream, and lettuce- the end.  When I was a vegetarian, I would get the exact same thing minus the chicken, talk about a picky eater.

I’m glad that I now appreciate more foods (even though some people claim I’m still a picky eater).  Instead of focusing on rice as the base, now I try to focus on lettuce as the base so that my bowls aren’t totally calorie bombs and packed full of carbs.

I used the Chipotle nutrition calculator and figured out that this bowl came to 425 calories which is much better than the huge counts that I’ve seen on some of the menu items there.

Last night I was at the store picking up a few last minute items for our Thanksgiving potluck at work and I came across this new to me peanut butter.  I’ve tried a few of their canned NUTrition options but I had never seen them in the peanut butter form.

This morning I wanted to try it out so I went back to a breakfast that I haven’t had in a couple months- the two ingredient pancake!  I kept things simple with just one egg, a medium banana, a dash of cinnamon, and then I topped it with 1 1/2 tbsp of the NUTrition energy mix peanut butter.

I am a big fan of this peanut butter!  I loved the different textures and tastes that it added to the pancake.  I had left it in my car overnight and it was hard from the cold so I am interested to see how well it spreads (important factor in nut butters!) when it is room temperature, but overall it was a winner.

Treadmill Workout

After my killer legs workout yesterday, I decided to do any easy 4 miles on the treadmill today to stretch everything out which took about 43 minutes.  I followed that up with 2 miles of .20 sprinting (at 8.0) and .1 of walking for an extra burn since there will be tons of food at lunch today.  I finished the workout with a plank hold where I finally reached the 3 minute mark!! That might be record breaking for a lot of people but it was pretty awesome for me- today is off to a good start!

What is your Thanksgiving plan of action?  Do you go for broke and eat it all or do you still take time to make conscious decisions when making your plate?

  2. Yummmm that pancake looks so good! I’m not a big chipotle fan(I don’t really like mexican food and mixing tons of things together into one dish) but that looks pretty delicious!

  4. Congrats on your 3-minute plank! I don’t think I’ve pulled that off since since soph year of high school!

    Being the self-proclaimed peanut butter expert I am, I’ve been eyeing that PB myself, but always opt for whatever’s on sale.

    As far as Thanksgiving goes, I start off making health-minded decisions and then, without fail, go for broke.

  5. Those 2 ingredient pancakes look like a great option for me in the morning. I am going to have to try to on Monday. As far as thanksgiving goes, since J and I have been together, we have done our own tradition. We rarely make the traditional thanksgiving dinner with turkey, stuffing cranberries etc. Our tradition: Wake up and eat breakfast with mimosas. We typically snack for lunch and then dinner is a a stuffed fish with the sides of our choice. Since J’s birthday falls on Thanksgiving this year, I will be making his favorite…chicken enchilidas.
