Last night’s dinner was quick, tasty, and FULL of garlic. Garlic is definitely my seasoning of choice and I just don’t understand why something that tastes so good can make your breath smell so bad. Since we were still in relaxing mode, I was about to just make some easy comfort food when I saw some salmon fillets in the freezer. After indulging on all the good stuff that comes with holiday parties, I decided that I would go with a healthier option.
I just used a light lemon garlic dressing that we already had in the fridge to marinate the salmon. I cooked it on the stove top in some extra virgin olive oil for about 10-12 minutes.
On the side I decided to give this quick quinoa and brown rice bag a shot. I bought it a couple weeks ago and had sort of forgotten about it. It’s similar to the Uncle Ben’s microwaveable rice so it only took 90 seconds to cook.
After the grains were done in the microwave, I wanted to add a little more flavor and bulk so I cut up some green peppers that I had on hand and threw it all on the stove top for about 5-10 minutes.
The result was delicious! There were so many different flavors and Shane and I had no problems cleaning our plates. I’m always a little nervous when I try a new dish, especially with something like fish that I am not as familiar with but this one was a winner.
This meal will definitely be making another appearance at our table because it is light which is perfect during warmer weather, but also a hot meal which is perfect during the winter. Even though it was light because of the fish, it was filling thanks to all the protein.
After dinner, we headed upstairs and were greeted with a little visitor hiding under the covers.
Today’s workout and meals were pretty uneventful. I completed my Slim n Sculpt Workout A + cardio which kicked off my Week 6 with This Fit Chick. I have put way too many miles on my current running shoes so my back is feeling pretty out of sorts today. I did the workout but I took it pretty easy.
I am really enjoying Phase 2 of this program because there is way more cardio added in which I love. We have choices on what to do for the cardio but they are circuit and interval based which is the fastest way to get a great workout done, in my opinion. I skipped our first super sets workout on Sunday but I am looking forward to hitting it hard this week. I like that I can really feel the soreness in my muscles the next day and I ‘m feeling more challenged in this phase than the last one (I guess that’s the whole idea behind phases, duh!
).

Garlic is def one of my fave seasonings. I put honey mustard on anything and everything that wouldn’t cause others to judge (OK who am I kidding?), but that’s not typically something one would call a seasoning.
My typical post-holiday indulgence usually involves lots of water, sweat-inducing exercise and fibrous fruits/veggies. Most importantly though, sleep!!
I always forget how important sleep is. I always try to aggressively undo what I did the week before and sleep falls down the list, but I’m going to try to remember that from now on!
